I've been doing a lot of cooking after being released from the hospital in May after 2 weeks of hospitalization for congestive heart failure and four stents to help the heart. Low carb and low sodium diet for life.
This past Friday I made a low carb / low sodium chicken & vegetables stirfry with no carb Miracle Noodles.
Here's what you'll need to cook along with Tenkar ;)
- a wok. I snagged this one on Amazon.
- a small pot to boil the pasta - if it has a strainer lid it will make rinsing and straining the pasta easier.
- 1lb of chicken. I used white meat chicken cut into 1-inch pieces
- 1 bag (4 servings) frozen broccoli florets
- 1/2 bag (2 servings) frozen peppers & onions
- 1/4 bag (1 serving) frozen corn kernels
- 2 oz olive oil
- 2 to 3 oz Mrs. Dash Sweet Teriyaki Marinade
- 2 to 3 oz Mr. Spice Ginger Sauce
- 2 bags Miracle Noodle Fettucini (shirataki konjac noodles)
- dash of no salt added hot sauce (optional)

I have a carbohydrate problem, I admit it. When I have spaghetti and meatballs, I make a spaghetti sandwich on buttered bread: I like my carbohydrates on top of other carbohydrates!
ReplyDeleteAs you can imagine, these Miracle Noodles intrigue me. And yet, carbohydrate-free noodles sounds so...wrong.
What do they taste like and where does that 'earthy' taste come from?
The noodles are made from a konjac plant root. Depending on the brand of konjac noodles, calories range from zero to 20 per bag.
DeleteThe noodles come packed in water. The earthy smell goes away when properly prepared. They taste like the sauce you add to them.
When I use them in spaghetti and meatballs, I add them to the sauce before serving.
Replace the chicken with tofu, skip the oil, and replace the 0 calorie noodles with whole grain noodles (brown rice, wheat, or buckwheat) and you've got a healthy meal that will reduce your risk of heart disease, diabetes, and colon cancer!

Thanks for this. I was not aware of those type of noodles. I just ordered some of the noodles and rice made of it and will be giving it a try!
